INGREDIENTS:

        • Plastic Zipper Bags
        • NonStick Butter Flavored Cooking Spray
        • Foil Grill Bags
        • 6 Large Eggs
        • 1/2 CupWhole or 2% Milk
        • Kosher Salt
        • Black Pepper
        • 1 lb.Hash Brown Potatoes – Thaw & Drain
        • 1 CupHam – fine dice
        • 2 CupsShredded Cheddar Cheese
        • Fresh Chives – Fine Chop

PREPARATION & COOKING:

First, crack all of the eggs in a large resealable plastic bag. Then, add milk, and season with salt and pepper. Seal and squish all together until mixed. Open and dump in the hash browns, ham, and cheese. Seal again and squish it all together to blend. Then, spray the inside of thefoil bagswith the butter-flavored cooking spray. Divide mixture among foil bags. Fold tightly to seal.

Place foil pouches over campfire or on top of a hot bed of coals. You can also put them on your grill. Cook until eggs are cooked and hash browns tender and crispy, about 10 minutes.Garnish with freshly chopped chives, salt and pepper to personal taste and serve. Dig in using your camp silverware.

For tools, all you’re going to need is a large cast iron skilletor cast iron griddle and long-handle metal spatulaso you don’t burn your hands.

INGREDIENTS:

        • 1 Red Bell Pepper
        • 1 Orange Bell Pepper
        • 1 Green Bell Pepper
        • 1 Yellow Bell Pepper
        • Large or Jumbo Eggs
        • 1 Stick of Butter
        • Salt and Pepper
        • Ham Slices – optional
        • Cheese Slices – optional
        • Toast or Bread Slices – optional

PREPARATION & COOKING:

Remove seed core from all of the peppers. Then, slice into 1/2″ rings. Allow 1/2 stick of butter to melt in cast iron skillet over hot fire. Arrange pepper rings and break 1 egg into each ring. Sprinkle salt and pepper on top. Cook until egg doneness preference. Flip if you wish (or not). Serve alone or between bread or toast with a slice of cheese or ham.

Brown your ground meat in a cast iron skillet and mix in taco seasoning over the campfire fire pit or your grill. Set out on a trivet on the table along with all of the other ingredients.

Before opening each bag of corn chips, gently squish bag to break into smaller pieces. Carefully open bag and let your campers spoon in their chosen ingredients and VOILA! Dinner is served! These are super delicious and easy campfire foil pouch dinners that you can literally throw onto your campfire or grill and be done with it. Cleanup is as easy as wadding up the foil and tossing in the trash!

The ingredients listed below are for one foil dinner. So, depending on how many campers you’ll be feeding will determine how much you’ll need to provide to build your foil dinners. All you need for tools are foil grilling bags.

INGREDIENTS:

        • 6 Large Shrimp – cleaned and deveined
        • 1 Corn Cob – shucked and cut into 3-4 pieces
        • 6 Kielbasa – cut into 1″ slices
        • 4 Small Red Bliss Potatoes – cut into quarters
        • 2-4 Tablespoons Butter
        • Old Bay Seasoning

PREPARATION & COOKING:

Prepare all the ingredients and spoon each into foil pouch and fold foil until sealed in a pouch. Place on the campfire grill top for 30 minutes. Or, on rainy nights, you can bake them in your RV oven on 400°F for 30 minutes. Dinner is served! For more intense taste, sprinkle on more Old Bay Seasoning after cooking. Warm your campers’ bellies on cool crisp days with this hearty cream of sausage, potato and kale soup! And make plenty because your campsite neighbors will be smelling it while it’s cooking in your cast iron dutch oven over the campfire.

INGREDIENTS:

        • 12 Red Bliss Baby Potatoes – cut into quarters
        • 2 Pkgs Kielbasa Sausage – cut 1/2″ slices
        • 1 Pkg Kale – wash and chop into small pieces
        • ¼ Onion – rough dice
        • 1 Green Pepper – rough dice
        • 1 Can Kidney Beans – rinse and drain
        • 1 Can Diced Tomatoes – do not drain
        • 4 Cups Beef Broth
        • 2 Cups Half and Half
        • 1/4 Cup Butter
        • 1 tsp Oregano
        • ½ tsp Sugar
        • 1 tsp Ground Cumin

PREPARATION & COOKING:

Prepare all ingredients and toss everything into Dutch Oven except the half and half. Bring to a gentle boil and then let simmer for 45 minutes or until potatoes are soft. Slowly stir in Half and Half. Allow to simmer another 15 minutes. Stir often to keep it from scalding. Spoon into large disposable soup bowls or soupcupsfor easier handling.

You’re going to make your hot campfire pie just as you would if you were making a toasted cheese sandwich. But instead of cooking them in a skillet, you’re going to cook them over a bed of coals using your pie iron.

INGREDIENTS:

        • Texas Toast Bread Slices
        • Pepper Jack Cheese Slices
        • Deli Ham Slices
        • Tomatoes – thin slices – optional
        • Jar of Slice Jalapeños
        • Softened Spreadable Butter

PREPARATION & COOKING:

Butter only one side of bread slices. Spray both inside halves of your pie iron with nonstick cooking spray. Place buttered sides of bread down into the two halves of the pie iron. Then, layer ham, cheese, tomato slices, and jalapeño slices.Close pie iron and latch. Place in campfire coals for about 7-10 minutes; flip over for another 5 minutes. Remove from pie iron and allow to cool. Cut in half or quarters.

Loaded Cheese Steak Hot Pocket

INGREDIENTS:

        • Soft Flour Tortillas
        • American White Cheese Slices
        • Shaved Beef – pre-cooked
        • Mushrooms – Slice
        • Onions – Dice
        • Red Bell Pepper – Dice
        • Cooking Spray
        • Pie Iron

PREPARATION & COOKING:

Spray each side of your pie iron with your nonstick cooking spray. Place tortillas into the two halves of the pie iron. Then, layer shaved beef, cheese slice, mushrooms, onions and peppers.Close, latch and place pie maker on campfire coals for about 5 minutes. Flip and cook for another 3 minutes. Remove from pie iron and allow to cool. Cut in half or quarters and enjoy! You can substitute the beef for chicken or any other meat if you’d rather.

Sourdough Apple Pie Delight

INGREDIENTS:

        • Sourdough Bread Slices
        • Canned Apple Pie Filling
        • Mini Marshmallows
        • Butter – Room Temperature
        • Cinnamon Powder
        • Caramel Baking Chips

PREPARATION & COOKING:

Spray each side of your pie iron with nonstick cooking spray. Butter one side of each slice of bread and place each slice of bread, butter side down, into the two halves of the pie iron. Spoon about 1/2 cup of apple pie filling into one half and spread around. Sprinkle Cinnamon. Add about 10-12 mini marshmallows and caramel baking chips if you’d like a little more pizazz.

Close and latch. Place in your campfire coals for about 5 minutes for each side. Remove your apple tart from pie iron and allow to cool. Cut in half and enjoy! These also taste magnificent with vanilla ice cream or whipped cream…or both!

CAMPFIRE SWEET SNACKS

S’mores Banana Boats

INGREDIENTS:

PREPARATION & COOKING:

Slit entire banana lengthwise. But do not slice all the way through to the bottom. Gently pull apart to form a boat. Stuff your banana boat with chocolate chips, mini marshmallows and cereal. Push together and wrap tightly in a foil wrapper. Then, twist the foil ends shut.

Set your banana boat pouch on hot campfire grate above fire. Cook for about 5-7 minutes; turning frequently using long campfire tongs or campfire cooking mitts. Remove from fire or grill and set aside. Open carefully allowing steam to escape. Allow to cool for a couple minutes before eating.

Keebler Fudge Stripe Simple S’mores
