When preparing a dish with cauliflower, most of us tend to discard the leaves, the stem and only use the florets. But can one consume the leaves, too? According to nutrition experts, one should definitely use them as they are one of the “best sources of iron”.

“One of the best sources of iron, this leaf is often thrown away when we make cauliflower preparation. It is really healthy and should be included in your diet,” according to Juhi Kapoor, a nutritionist.

She added that the leaves are a source of antioxidants that work their way to help fight constipation, acne, hair fall, and weak immunity.

Concurred Dr Asma Lone, clinical nutritionist and dietician, Ujala Cygnus Group of Hospitals, and said, “The high fibre content in these parts of the cauliflower can help regulate digestion and prevent constipation.”

“Additionally, the vitamin K in cauliflower leaves can help support healthy bone development and blood clotting. In fact, they are full of nutrients and can be a great addition to your diet. Cauliflower leaves are a good source of vitamins A, C, and K, as well as fibre, calcium, and iron. Cauliflower stems also contain similar nutrients and are particularly rich in vitamin C,” Dr Lone told indianexpress.com.

Kapoor mentioned that they can be added to sabzi, curries as a main ingredient, or as garnish. “You can also use it in sandwich, burgers or salads,” she suggested, adding that it could be part of “stuffing” too.

Dr Lone suggested chopping the leaves and adding them to soups or stews, or to use them as a garnish for salads. “The leaves can be thinly sliced and used in stir-fries or roasted alongside the cauliflower florets,” said Dr Lone.

However, she added that people with any specific health concerns or conditions, “should always consult with a doctor or a registered dietitian to determine if cauliflower leaves are safe for you to consume”.
