This Egg Strata is always a hit with our family and our farmhouse guests – everyone loves it! This Egg strata (similar to a baked egg casserole) recipe makes for a quick hearty breakfast or brunch dish that can be whipped up the night before or the morning of. This dish is a savory one, and the great thing is, it’s packed with tasty and nutritious ingredients!

Egg Casserole + Brunch Buffet

We love using this Egg Strata as the staple to the perfect brunch. Whether we have guests waking up from the Farmhouse Guest Quarters or we are hosting Easter brunch, this is the perfect hearty dish that will feed up to 12 people. When paired with our fresh gooey Cinnamon Rolls, Creamy Orange Muffins or Marinated Ham the smells in the kitchen brings everyone in!

Season Guided Cooking

Cooking with the season is one of my specialties. I don’t like to force things, if I can help it. If it’s not asparagus season, then I don’t generally go out and purchase them simply to add them to a dish or meal. We enjoy Squash and Potatoes during the fall months and Green Beans and Garlic in the mid of summer!

I like, instead to go with what nature is providing us with during that season. Generally when we have an abundance of eggs is in the spring time when the asparagus is peaking through the ground. It’s our gentle reminder that’s it’s time to make this delightful egg strata dish to be able to incorporate our seasons best veggies.

Possibly the best part of this dish is that it’s so versatile! It can be dressed up for a holiday brunch buffet or it can be used as weekly staple for supper time. I love that everything is contained in one dish. We add a side of fruit or pastries and voila’ it turns into supper!

I am not generally a huge fan of leftovers, but I will say the leftovers from this strata are one of my most favorites of all times.

Ingredients for this easy breakfast strata recipe

  • 1 small onion chopped
  • 1/2 Cup chopped red pepper
  • 4 Cups packed chopped spinach
  • 1 pkg (6 oz.) Stove Top Stuffing (chicken flavor)
  • 2 Tbsp fresh parsley
  • 6 fresh eggs
  • 3/4 Cup mozzarella cheese shredded (can use your favorite cheese: cheddar cheese, swiss cheese, etc.)

Steps to make this Quick Egg Strata

  1. Preheat oven to 375 F
  2. Spray large skillet with cooking spray
  3. Add onion and red pepper to skillet
  4. Cook and stir on medium-high heat for 5 minutes or until softened
  5. Stir in spinach. Stir until it’s a little limp and set aside
  6. Prepare stuffing as directed on box
  7. Stir in onion mixture and parsley in skillet
  8. Beat/ whisk eggs
  9. Combine everything (eggs, stuffing, and the ingredients on the skillet) in a large bowl
  10. Pour into a greased 8′ square baking pan
  11. Sprinkle with cheese
  12. Bake about 35 minutes (until firm and the top of the strata is golden brown)
  13. Let cool for 15 minutes
  14. Cut into strips or squares and serve warm
