Follow the 3 simple steps of our flapjack recipe for the ultimate sweet treat

Step 1

Preheat the oven to 180°C/160° Fan, 350°F, Gas 4 while you combine the butter and Lyle's Golden Syrup in a large non-stick saucepan. Heat gently until melted, then remove from the heat and stir in the oats and salt.

Step 2

Spoon the flapjack mixture into a 20cm (8”) shallow loose-bottomed square baking tin, greased and lined with baking paper. Level and press firmly with a palette knife to smooth. Bake on the middle shelf for 25 minutes, until gorgeously golden brown on top.

Pro tip

Lining the baking tin with parchment paper makes it easy to remove the flapjacks. Once they have cooled in the tin you can slide the whole flapjack on its paper onto a board to cut into pieces.

Step 3

Remove and leave to cool in the tin for 30 minutes. Then lift out of the tin to cool completely on a wire rack. Once cooled, cut into squares that can be picked up and enjoyed by your family and friends.

Pro tip

Flapjacks can be frozen but remember that if they contain moist fruit such as apples or blueberries, they might soften on thawing.

What are flapjacks?

Chewy, classic, and packed full of healthy wholegrain oats, flapjacks are a long-standing family favourite. What’s more, these scrumptious snacks are notoriously simple to make and suit every occasion – from parties and gatherings, to low key evenings in front of the television. Flapjacks are baked bars that are made of just four ingredients: butter, golden syrup, rolled porridge oats and a pinch of salt.

Be careful not to confuse them withAmerican flapjacksthough, which are better known to us as pancakes!

Frequently asked questions about flapjacks

Why do my homemade flapjacks fall apart?

This can happen if you overcook or undercook your flapjacks. When you overcook a flapjack, the golden syrup dries out and it becomes crumbly. An undercooked flapjack will have a raw doughy texture that doesn’t hold its shape. Be sure you are cooking your flapjacks for 25 minutes on 180°C/160° Fan, 350°F, Gas 4 for the perfect chewy bake!

What can I add to flapjacks?

If you’re feeling adventurous, try adding some extra ingredients to your flapjack mix. Some popular additional extras often include berries, chocolate, caramel, raisins, and nuts. The rest of the flapjack recipe stays the same, but you get to indulge in an extra special twist!

Are flapjacks a healthy snack?

While flapjacks are without a doubt a delicious sweet treat, they do contain butter, sugar and syrup. For that reason, we wouldn't describe them as 'healthy' but more as a tasty snack to be enjoyed in moderation.

Should you cut flapjacks hot or cold?

Be careful not to cut them straight after they come out of the oven as they might be too hot and burn you. You also don't want to let them cool down completely before cutting them as they'll be too hard. You should always cut flapjacks while they're still warm so you can easily slice through them and create even, equal slices.

How long will homemade flapjacks keep?

We'll be very surprised if there are any leftovers from your delicious homemade flapjacks, but if there somehow are some that survive, they'll keep for about ten days in an airtight container.
