But guess what? If you happen to have a package of muffin mix, an egg, and some milk (or water!), you have everything you need to make absolutely delicious homemade pancakes. And all it takes is a few minutes!

Making pancakes with muffin mix is such a fun breakfast shortcut and also opens up so many fun and easy flavor possibilities!

Can You Make Pancakes with Muffin Mix?

Yes, you can! In fact, it's really easy and only requires a few ingredients. The pancakes will be a bit different than if you were to make them from scratch or to use a pancake mix, but they will still be delicious! You can even make pancakes with cake mix.

Muffin mix is generally a lot sweeter than pancake mix so note that these pancakes will not be low-sugar and may be more sugar you're used to in a typical pancake.

But they should still be nice and fluffy and most people won't even realize you made the pancakes with a muffin mix!

I've made these pancakes with blueberry, banana, and mixed berry muffin mix and all are absolutely delicious and packed with flavor that requires no additional ingredients.

Ingredients Needed

Here's everything you need to make this super easy breakfast:

  • 1 6.5 or 7 oz. package of muffin mix
  • 1 large egg
  • ½ cup milk (if you don't have milk, you can replace with water)

That's it!

I've made these pancakes with both a 6.5 and 7 oz. package of muffin mix and have found that using 1 egg and ½ cup of milk works with both sizes.

If you have a larger package of mix, I recommend using a kitchen scale to weigh out anywhere from 6.5-7 oz. of the mix.

I've made these pancakes with Betty Crocker muffin mix and Jiffy muffin mix, but it will also work with Martha White muffin mix, Krusteaz muffin mix, and pretty much any brand!

How to Make Muffin Mix Pancakes

Since this recipe only requires a few ingredients, the process is also quite easy.

Simply put your muffin mix in a large bowl. Depending on the mix, you may want to use your fingers to break up some of the clumps.

Create a well in the center of the mix and add the egg and milk. I like to lightly beat my egg before adding it to the mix, but you don't have to if you don't want to dirty a bowl.

Mix until just combined. It's OK if the batter is a little bit lumpy.

If you want, you can add any mix-ins you desire. But you may already have the mix-ins in the muffin mix! The pancake batter you see below is from a blueberry muffin mix.

Heat a griddle or large skillet over medium-low heat and lightly brush with butter or spray with cooking oil.

Spoon about 3 Tbsp of pancake batter onto the hot griddle. Cook for about 1-2 minutes, until bubbles form on the tops of pancakes.

Flip and continue to cook until second side is golden.

Continue with remaining batter.

Of course, if you prefer smaller or larger pancakes, you can certainly use less or more batter. Using 3 Tbsp, I get about 8 pancakes from the 6.5 oz. box of mix and 9 pancakes from the 7 oz. box.

The first time I made these, I was actually shocked by how delicious they turned out. They're definitely sweeter than the pancakes you're probably used to, but so, so rich and yummy!

They're basically fool-proof and so, so fluffy!

Possible Substitutes

There are only 3 ingredients in these muffin mix pancakes, so not too much room for ingredients substitutes... but I do have a couple!

  • If you don't have milk, you can make these pancakes with water or really any liquid. With water, the pancakes will likely not be as rich as typical pancakes, but the muffin mix adds a richness already, so they will still be tasty.
  • If you don't have an egg, you can try any number of egg substitutes. Things like mashed banana (¼ cup), applesauce or pumpkin puree (¼ cup), or a flax or chia egg (1 Tbsp flaxseed meal or chia seeds and 2 ½ Tbsp water mixed together).
  • As I mentioned above, you can also feel free to add in any other mix-ins you want, like fruit, chocolate chips, nuts, etc.

Ingredients

Instructions

  • Put muffin mix in a medium bowl.

  • Add egg and milk and mix until just combined, taking care not to over-mix (it's OK if the batter is a little lumpy).

  • If you have a larger box or bag of muffin mix, I recommend weighing out anywhere between 6.5 and 7 oz. of mix (or doubling recipe if you have a 13-14 oz. box).
  • If you don't have milk, you can replace with water or another liquid.
