The base of these bars are made up of chewy peanut butter crispies. They are topped with a layer of butterscotch chocolate. They are SO good. You MUST try them and find out for yourself.

This fall my son played football. Each Friday the moms helped put together a lunch for them. My contribution was always a dessert. Since there are over 75 boys, it can be a bit time consuming to make that many treats, and costly to purchase them.

I decided to make scotcharoos (I always call them O'Henry Bars, but it's the same thing.) They're fairly quick to mix up and they make a lot, so it was a win-win.

I ended up having to drop them off and couldn't stay for the lunch. But I was told that they were a big hit and that the boys scarfed them down.

INGREDIENTS FOR O'HENRY BARS

  • crispy rice cereal
  • sugar
  • corn syrup
  • peanut butter
  • milk chocolate chips
  • butterscotch chips

HOW TO MAKE SCOTCHAROOS

I had these on occasion growing up.

But these bars are a staple treat for my in-laws. They have it at pretty much every family gathering. Christmas parties and the summer family reunion are always celebrated with these peanut butter treats.

At our most recent get-together, the youngest cousin kept calling them "old henry bars". We thought it was pretty cute.

Besides being a tradition, they are so easy to make and they make A LOT! So it's a perfect dessert for large family gatherings.

  1. Begin by measuring the rice krispies in a bowl. Set aside.
  2. Combine the sugar and corn syrup in a sturdy pot. Bring it to a boil, then add the peanut butter. Mix until peanut butter is melted and incorporated into sauce.
  3. Pour the peanut butter over the cereal and mix well.
  4. Press the cereal mixture into a greased cookie sheet pan.
  5. Melt the chocolate and butterscotch chips in the microwave. Cook for one minute increments, stirring after each minute until chips are melted.
  6. Pour and spread over cereal mixture.
  7. Let chocolate cool and harden before cutting into bars.

TIPS FOR O'HENRY BARS

  • To avoid the cereal sticking to the spoon as you're spreading it, get the back of the spoon wet with water.
  • Place the finished bars into the fridge to cool more quickly.

CAN YOU FREEZE O'HENRY BARS?

Yep! Cut them into bars and place in a zip-top bag. Freeze for up to 3 months. Pull them out and let them sit for an hour or so to thaw and enjoy!

Ingredients

  • 2 c. sugar
  • 2 c. corn syrup
  • 2 c. peanut butter
  • 12 c. crispy rice
  • 3 c. chocolate chips
  • 2 c. butterscotch chips

Instructions

  1. Measure the cereal into a large bowl. Set aside.
  2. Place the sugar and corn syrup in a pot. Bring to a boil, then remove from heat.
  3. Add peanut butter to sugar mixture and stir until melted and combined.
  4. Pour over cereal, and mix well.
  5. Press cereal into a large cookie sheet.
  6. Melt the chocolate and butterscotch chips in the microwave. Cook in one minute increments, stirring after each minute until melted.
  7. Pour chocolate over bars and spread evenly.
  8. Let the chocolate cool and harden before cutting into bars.

Notes:

To prevent the spoon from sticking when pressing the cereal mixture into a pan, run the back of the spoon under water as often as needed. The water will help prevent it from sticking to the cereal.To help the chocolate set up more quickly, place in the fridge.Store in an airtight container.Freeze cut bars in an zip top bag for longer storage. Let come to room temperature before eating.
