What are quail?

Originally native to the Middle East, quail are now found across Europe. It's a small bird, so one will serve one person as a starter, and you'll need two as a main course. It has a fairly high proportion of lean, meaty flesh to bone, and a delicate flavour.

Choose the best quail

Look for birds that are plump, with unblemished, fresh-looking creamy/yellow skin with a pink tinge - avoid any that seem dry, or smell 'off'. If you are buying a farmed quail, the best are organic or free-range, reared in the traditional way. Quails are sold boned or unboned. Boned have more room for stuffing, and make for slightly less messy eating.

How to prepare quail

Take the quail out of the fridge around 1 hour before cooking. Using kitchen paper, wipe the outside of the bird and inside the cavity. As quail has quite lean, dry meat, it can be marinated at this point. Otherwise, season inside with salt and pepper then, if you like, push in some flavourings or stuffing (fruit-based stuffings such as plum or prune work well). Tie the legs together with string. As well as brushing with melted butter or oil, you can also wrap the breast with pancetta, Parma ham or vine leaves to prevent it from drying out.

Alternatively, you can spatchco*ck them before cooking (particularly for grilling or barbecuing as they will cook faster that way). Remove any ties, cut out the backbone with a pair of kitchen scissors, then use the flat of your hand to push down along the length of the bird, flattening it out. Then push two skewers across the width of its body, going in through the leg on one side and coming out through the leg on the other; the skewers will keep it flat while cooking.

How to store quail

Keep the quail in the fridge, on a tray, covered with foil or greaseproof paper. Make sure it's on the bottom shelf, so that any juices don't contaminate any other food; it's particularly important to keep the quail away from any other cooked meats or food that will be eaten raw. Eat within two or three days.

A quail in its first year will lay almost every day. And you won't have to wait long. Unlike chickens, which take about 5 months to start laying, quail only take 6 weeks. Sure, it takes 5 quail eggs to equal one chicken egg, but if you want fresh eggs and can't have chickens, quail eggs are a great alternative.

California quail are serially monogamous; this means that their pair bonds last only during one breeding season. Their nest is a shallow scrape lined with vegetation on the ground beneath a shrub or other cover.

No, quails are from family who mark their area and allow no other male to enter, just as partridges in the wild, however you may combine one male with few females for peaceful dwelling. In captivity don't combine males with males in same cage, they will be fighting each other.

Can I keep two male quails together? ›

Breeding groups of quail should be made up of one species only, usually one male and two females in each aviary. Having too many males in a cage will cause fighting and unsuccessful mating. Many quail will lay throughout the year if conditions are suitable but the normal cycle is from spring to autumn.

Do you need more than one quail? ›

They are social animals and you really want two or three at least. Two birds are really not much more difficult than one. Your birds will be much happier! Depends on the type of quail.

Can you keep one quail as a pet? ›

You must house at least two quails together. The reason for this is because they are social birds that will get lonely even if you visit or play with them every day.
