I don’t make baked ham very often. I’m not really sure why. I like ham, it’s just not something that pops into my head when I’m planning my weekly shopping list. Months or even years will go by without me feeling the urge – but when I do, I normally prefer a sweet glaze on it.

In fact my favorite baked ham recipe is from Nigella Bites cookbook and it’s the coca-cola ham. You simmer it in cola and onions for a few hours, then remove it and slather it with molasses, brown sugar, cloves and mustard powder and bake for an hour until crispy and sticky. SO. GOOD.When I do make that baked ham, I always serve it with her sweet corn custard from the same book, which is also amazing.

Anyway, they were practically giving hams away at the grocery store the other day and I couldn’t pass one up. Obviously my usual preferred methods for baked ham weren’t going to work for a keto version, so I had to come up with something different. Being that the winters are mild here in SC, my rosemary bush is thriving so I picked a bunch of that and chopped it up. I love mustard with ham, so in it went along with some mayo. Then some minced garlic, and freshly ground pepper and my paste was made.

I slathered it on the smoky caramel colored skin and popped it into the oven at 300 degrees for 5 hours (for a 19lb ham). This Rosemary & Mustard Crusted Baked Ham was really, really good! Not necessarily a groundbreaking combination – but there’s something to be said for simplicity. I just may have a new favorite way to eat ham, and I have a feeling it will be making it onto our table a lot more often from now on…

Description

A savory baked ham recipe that is surprisingly delicious and perfect for keto or low carb diets.

Ingredients

  • 1 cup prepared mustard
  • 1/2 cup mayonnaise
  • 2 tablespoons garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • freshly ground pepper
  • 1 smoked ham – Mine was 19 pounds

Instructions

  1. Combine all ingredients in a small bowl.
  2. Place your ham in a roasting pan fat side up. Slather generously with your mustard mixture. Pour about 1/2 cup of water into the bottom of the pan and place in a preheated 300 degree oven. Bake for about 15 minutes per lb. uncovered.
  3. Slice and serve.

    i received a smoked (but not fully cooked) ham from a pork csa and i’m wondering if i would put this on at the beginning. it will need to cook for just over five hours to be fully cooked – would i add this for the last hour or two? thans!

    Can you use a spiral ham? Also, I’ve noticed Rosemary can overtake a dish… is 2 tbsp just right or could I cut it down?

      Yes you could use a spiral ham for this – and while that amount of rosemary is perfect for me, if you find the flavor of rosemary in general to be overwhelming you could certainly reduce it.

    This was so amazing and delicious!! My husband smoked our 12 pound spiral ham with cherry wood for 2.5 hours, then we slathered this on it, wrapped it up in butcher paper, and cooked it at 350 for 1.5 hours. It was so flavorful and juicy! The best spiral ham I have ever had! I love that it wasn’t sticky and sweet like spiral hams normally are. I really wanted a savory ham, and this totally hit the spot!

      I’d try Greek yoghurt (full fat, of course). Will tenderise the meat, too, if you leave it to marinated for a short time.

      Either a whole grain mustard or a dijon mustard will work great – probably not so much the yellow hot dog mustard to get the best flavor! A horseradish mustard would also be yummy or even a honey mustard if the carbs aren’t too high! Enjoy!
