Sukseh a.k.a. Lazy Cake a.k.a. Chocolate Salami - à la Susu (2024)

Whether you call it Lazy Cake or Chocolate Salami, Biscuits au Chocolat or Sukseh, if you have had this delicious dessert, you are bound to love it!

And if you haven’t? Well, you need to get up and make it right now!

The hardest part of making this “lazy cake” is driving to the store to get the ingredients because this no-bake delight comes together in under 10 minutes. Just stireverything together, roll it into a log in some foil (no pan required!) and then pop it in the freezer until it has set.

Oh wait, on second thought, the hardest part is probably waiting for it to set in the freezer, but trust me, its worth the wait ;).

This dessert is so customizable in the sense that you can add anything to the base. Nuts, raisins, coconut, candies, marshmallows, Nutella, the possibilities are endless! I love the plain version I’m sharing below, but just mix in whatever you like and make it truly yours.

The plain version is what I grew up loving from trips to Damascus in the summer. We would all request it whenever the whole family was getting together, and it would be the first thing to finish on the dessert table. I used tosee the little chocolate squares dotted with cookie chunks in the display cases of my favorite bakeries and thoughtit was a specialty item only found in high endbake shops. Because of that, you can imagine how impressed I was when my aunt made it for a birthday one summer. Despite my love for it and realizing it was something you could make at home,we only enjoyed Sukseh while in Syria which made it extra special for me.

I didn’tattempt it myself until after I got married and realized this was also one of my husbands favorite childhood desserts. I took my favorite elements from all the different recipes floating around (online & IRL) and because I like a more pronounced chocolate flavor, decided to combine both cocoa powder and chocolate chips. It is chocolaty enough without being overpowering and has a luscious texture you don’t get from just using cocoa powder. I wanted it to be simple (there’s a reason it’s called Lazy Cake), no milk and sugar and eggs here, and ended up with this 5 ingredient version that is sure to please. Using the sweetened condensed milk instead of the combination of milk, sugar and eggs also gives you a smoother filling and no need to cook it on the stove top. I don’t know about you, but that is a win in my book 🙂

It is one of those desserts that is perfect forwhen you are having company over because you can prepare it way in advance and just have it in your freezer until you’re ready to serve. Or just have some on hand for those times you have unexpected company, although that doesn’t work too well forMr. B and I because we can’t go too long knowing a log of Sukseh is sitting in the freezer without having some ourselves.

I think the same will go for you when you make it for yourself ;).

Ingredients

  1. 1 14-oz can Sweetened Condensed Milk
  2. 1 cup Chocolate Chips, melted (I used half milk chocolate and half dark chocolate chips)
  3. 1/4 cup Salted Butter, melted
  4. 1/4 cup Cocoa Powder
  5. 40-50 Tea Biscuits or Maria Cookies, crushed (about 4 cups)

Instructions

  1. Whisk together the sweetened condensed milk, melted chocolate, butter, and cocoa powder until combined.
  2. Fold in the crushed biscuits.
  3. Cut two 14-inch long sheets of foil and divide the batter between them. Using the foil, form a 10x2 inch log and wrap tightly.
  4. Freeze for at least two hours, until log has set.
  5. Slice into 1/2-inch slices and enjoy!

Notes

  1. You will get about 40 1/2-inch slices using the above directions for forming the cake.
  2. You can use a pie pan, loaf pan or any pan you like to form the dessert, just line it with plastic wrap, foil or wax paper to make removing it easier after it has set. I like the rustic look of the hand rolled foil logs.
