My local Farmer’s Markets are filled with abundance. Zucchini is my current obsession. So, as I was scrolling on TikTok a few weeks ago, Cicoria was showing us how she made her Crispy Italian Zucchini Fritters. I just knew I had to try this crispy fritter recipe. Of course, I added my own little touches. These garden fresh fritters can be served up as an appetizer, side dish or even enjoy as a lovely vegetarian meal with a simple side salad.

TIPS FOR MAKING CRISPY ITALIAN ZUCCHINI FRITTERS

Soggy Zucchini Fritters will never haunt you again. So, if you are wondering how to get these yummy fritters super crispy on the outside and tender on the inside, follow these tips.

Grate the zucchini on a box grater using the side you would typically use for shredding cheese.

The key to crispy is to release as much water (moisture) out of the zucchini, as possible. Here are a few simple tricks to squeeze the moisture out of the grated squash:

  • transfer grated zucchini to cheesecloth or mesh bag and SQUEEZE
  • squeeze with your hands over a strainer
  • build a single layer onto paper towels, cover and allow the paper towels to soak up the moisture

Why are my Zucchini Fritters falling apart?

Another common question is why do the fritters fall apart while frying. Typically, there is more than likely not enough of a binder in the fritter batter mix. Cheese, bread crumbs and eggs all act as binders and will help to hold these vegetable cakes in place.

Fritters may also fall apart if you fail to use enough oil, or too much! Additionally, they may break apart if you have the tendency to move them around as they are frying. Try not to touch the fritters until they are ready to flip! Fry in a non-stick pan to avoid these cheesy zucchini fritters from sticking to the pan.

Why are my fritters raw inside?

Simply put, the oil is too HOT! These Crispy Italian Zucchini Fritters should be cooked on a medium to medium-low setting to ensure they are fully-cooked on the inside.

What type of oil for frying fritters?

Canola, peanut or avocado oil are great choices when preparing any type of fritter. You will just need enough oil for a shallow fry. Using a cookie scoop works really well to create equal portions. Fry in batches, if necessary.

HOW TO MAKE GLUTEN-FREE CRISPY ITALIAN ZUCCHINI FRITTERS?

Yes, it’s possible to make the most incredible gluten-free zucchini fritters. Merely, substitute the flour and panko bread crumbs for gluten-free options.

AIR FRYER ZUCCHINI FRITTERS

Yes, you can prepare these Crispy Zucchini Fritters in an air fryer.

Here are a few tips:

  • use two, instead of three eggs
  • add in another 1/2 cup of cheese
  • form patties with your hands and allow to firm up in the fridge or freezer for a few minutes
  • air fry at 350° for five minutes
  • flip and air fryer for another eight minutes

HOW TO SERVE ZUCCHINI FRITTERS

Zucchini Fritter appetizers or snacks, pair well with a simple sauce, dip and/or sour cream.

Here is a list of some great sauces to pair with these fabulous vegetarian fritters:

  • remoulade
  • marinara
  • ranch
  • Sriracha mayo
  • garlic aioli
  • creamy horseradish

These Vegetarian Zucchini Fritters can be served as a main course with a side salad, steamed vegetables and/or rice.

HOW TO STORE AND REHEAT FRITTERS

Store these amazing crispy vegetable fritters in the fridge by layering them in an air-tight container. Place parchment paper sheets between the layers to avoid the fritters from sticking to each other.

Individually flash freezing the fritters and storing as you would above in the fridge, will make the zucchini fritters last for up to three months in the freezer. Thaw in the fridge overnight to use within the next two days.

A thin coat of non-stick spray or oil in a pan, heated to medium, is a perfect method for reheating. Reheating in an air fryer is also an option.

Crispy Italian Zucchini Fritters

Description

Transform your farmer’s market finds into these Crispy Italian Zucchini Fritters. The perfect blend of spices, freshly grated Parmesan cheese and a touch of bread crumbs make these fritters tasty and tender on the inside and super crunchy on the outside!

Ingredients

Scale

  • 2 medium zucchini, grated
  • oil for a shallow fry
  • 3 eggs
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 cup seasoned Italian bread crumbs
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

  1. Grate the zucchini on a box grater.
  2. Squeeze out as much water as possible using any of the techniques mentioned in the post.
  3. Heat enough oil for a shallow fry to medium.
  4. Place the grated zucchini in a bowl.
  5. Add the remaining ingredients.
  6. Mix well.
  7. Using a spoon or scoop, place equal amounts of the fritter mixture into the heated oil.
  8. Flatten just a touch. (the thicker the fritter, the longer they will have to fry)
  9. Allow to fry on one side for at least 4 to 5 minutes.
  10. Flip.
  11. Fry for another 3 to 4 minutes.
  12. Remove and place on paper towels to drain any excess oil.
  13. Garnish with a touch of salt.
  14. Serve warm and ENJOY!
