| Hi I have made yet another batch of my award winning flapjacks BUT for the second time when I have taken them out of the baking tin after allowing to cool for 15 minutes some have crumbled I can remould them as they are moist but why are they crumbling? I follow the recipe but add a little bit more butter and syrup because the first ever batch I made were like bricks The second batch when they crumbled I thought it was because of me adding a bit of water so rebaked them. This the third batch I have only added a very small amount of extra syrup and butter |

| What recipe are you using? I use http://www.bbcgoodfood.com/recipes/1148640/yummy-golden-syrup-flapjacks To make them a bit more gooey add more syrup only. Also what type of oven are you using, if it is a fan then make sure you lower the temperature and possibly give less cooking time. Hope this helps. Shirley |

| Are you using different oatflakes than normal? Some brands seem to give a drier flapjack. I love gooey flapjacks, my mother's friend called them elephant's earwax ------------- |

| 125g Butter 125g Demerara sugar 5 tbsp. golden syrup 225g Scotts porage oats 1tbsp of cimmamin over gas 5 bake for 20 mins and cool for 15 |

| I use the following recipe: 6oz butter The only time mine crumble are if I cut them too soon after they come out the oven. I cook them for 15-20 at 160 degrees in the fan oven. Sorry for the ounces - I'm old fashioned!x ------------- |

| Just be careful what butter you use, some of the 'spreadable' varieties contain vegetable oil or added water and wont set properly in some baking recipes, best to use the old fashioned block butter without any additives. | That could explain it! I added a bit of the spreadable on each occasion. Cutting / taking out of the tin while still warm |

Oh agree! From past experience, spreadable makes baking a disaster. Good old unsalted block butter for me. I bake wheat-free too - fraught with disaster lol!x ------------- |

| I cut mine whilst they are in the tin and still soft and then allow them to cool completely whilst still in the tin. I think this helps them to keep their shape. |

| While we're on the subject of baking - does anyone else here bake gluten or wheat free cakes or biccies? I'm at last having success with cakes and bakes, but not with biscuits!! They're always so awful - look like cow pats lol. Anyone got any tips?x ------------- |

| Two questions Could I use greased baking paper in the tin then add the mix on top then slice them up whilst in the tin and then pull the whole lot out of the tin when cold would this help and stop the crumbling issue? Added cornflakes to the latest batch = disaster I even added 6 table spoons of syrup and extra butter Thanks |

| 6oz butter, 6 tablespoons syrup, 12 tables spoons oats. Line pan with greaseproof. Put mixture in and press down all over with a fork. Cook about 200 ish for about 25 mins. Take out of oven, cover with a teatowel and press down firmly all over the flapjack while still hot. Leave to cool slightly, then slice. This recipe is well over 100 yrs old and has been passed down in my grannies cookbook. Never fails! X |
