When I was growing up, vegetables played a big, starring role in all our dinners. And I’ve maintained that tradition in my adult life — especially since becoming a Registered Dietitian. But at the same time, I am a pasta fiend; I could probably eat it daily and not tire of it. So how do I get my pasta fix and keep my veggie-heavy diet? I let the two join forces!

You see, pasta can handle a lot of vegetables — way more than you might think. Load your noodles with so many veggies that they practically run the show and you’ve got a dinner that you can feel good about that still satisfies your craving for a good bowl of pasta.

Let Vegetables Run the Show on Pasta Night

Instead of treating vegetables as a garnish or sauce to your pasta, treat them as equal players. In fact, you can go so far as to flip the proportions of your pasta and your vegetables, so you’re cooking up a vegetable dish with some pasta, rather than a pasta dish with some vegetables.

Use whatever pasta recipe you enjoy that involves vegetables as a guide. Start there, then add more vegetables to the situation and trim down the amount of pasta you’re boiling. Not only will it stretch that box of pasta further, but it will also result in a wholesome, extra-colorful dinner that will seriously give your vegetable intake for the day a boost.

It’s also a great way to help kids and veggie naysayers get their fill — with every bite of noodles, they’ll get two bites of vegetables. Make this the norm on pasta night and everyone will feel good about it.
