If you live in the Upper Midwest, you probably know about pickle roll-ups. They’re not exactly fine cuisine, but they are DELICIOUS. (Have a gander at this fine recipe over here.)

I’ve also heard it called Minnesota sushi. Yes, fancy people on the coasts. Laugh it up about the tacky, kitschy taste of those of us here in flyover country. But I embrace my midwestern-ness. And I love this stuff.

The only thing that might be better is a big vat of Top the Tater with Old Dutch Rip-L Chips. You feel me, Minnesota friends?I thought so.

But back to the pickle roll-ups.

To make these things, you spread cream cheese on deli ham, and roll it around a pickle and slice it into sushi-like discs. It sounds crazy if you’ve never had it, but trust me on this. It’s AMAZING.

The only trouble is, it’s incredibly tedious to assemble these things. And inevitably, they get eaten within just minutes of serving them. Which makes the time-consuming assembly feel like a major injustice.

BUT. My cousin Lauren showed up at Thanksgiving this year with the most brilliant solution: pickle roll-ups in dip form.

I kid you not, my family devoured a giant of bowl of this stuff before the turkey even made it onto the table. We have no shame.

But yeah. WORTH IT.
